Last night after getting home from work I was in a mad dash to wash dishes, bottles, etc. My little one actually afforded me the time to also whip up a very quick dinner of pasta too!
One of my favs and I think K enjoys it too is to make like my own version of alfredo sauce. I don't know if I can really compare it to alfredo sauce. It's more like a ranch flavored sauce, I guess.
I boiled up some penne pasta. When it was done I threw in some butter and mixed it in until it all melted. I then squirted some yummy buttermilk ranch dressing and added minced garlic, shredded mozzarella cheese, red pepper flakes, and some milk. Normally, I would have thrown in some grated parmesan cheese too but we were out of it. I diced up a tomato and threw it into the finished dish.
While the penne pasta was boiling I took two hamburger buns and coated them with butter and garlic powder and threw them into the oven at 350 degrees for ten minutes.
I ate until I was about to bust and I am very happy to have left overs to eat today while at work.
I think I could eat some version of pasta everyday. Almost any variety of an Italian dish and most definitely just about any Asian noodle dish.
I wish I had taken photos of our dinner last night but was more so into eating it than photographing it. I'll never be successful as a foodie blogger so I'll leave it to others to do that. :)

I read this when you posted it and am still thinking about it. *drool* I'm putting it on the menu this week.
