I'm on my second week of restricting my calories down to 1600+ compared to the 2500-3000 that I was probably eating. So far, I have seen a loss of 4 lbs. I'm hoping to lose 10+. Ideally I'm hoping for 20 to get back to my Before Baby (BB) weight. However, I will be joyful if I can at least lose 10. I'd like to get to a 10 lb loss and see where I go from there. Baby steps, y'all.
I have been loosely following the Paleo Diet. I won't go into too much detail about Paleo, since it can easily be googled. It's basically eat veggies, fruits, meats and get rid of breads, dairy, grains, and legumes.
I'm going to have a hard time with not eating rice or beans. I think on occasion I will eat those two things. Some days, it's hard to eat a meal without bread or cheese. I have to be more motivated and creative now when we eat our meals. K is on board with doing this with me when it comes to shared meals, but I don't know if he's as committed to not eat breads, cereals, etc.
Pineapples, banana, 1 hard boiled egg, strawberries
Coffee w/ almond milk
sliced apples, peanut butter
Baked chicken w/ sauerkraut
Pot roast - We'll shred the meat and make lettuce wraps with stir fried peppers, broccoli, onion, and water chestnuts
