Trying Something New

I'm on my second week of restricting my calories down to 1600+ compared to the 2500-3000 that I was probably eating. So far, I have seen a loss of 4 lbs. I'm hoping to lose 10+. Ideally I'm hoping for 20 to get back to my Before Baby (BB) weight. However, I will be joyful if I can at least lose 10. I'd like to get to a 10 lb loss and see where I go from there. Baby steps, y'all.

I have been loosely following the Paleo Diet. I won't go into too much detail about Paleo, since it can easily be googled. It's basically eat veggies, fruits, meats and get rid of breads, dairy, grains, and legumes.

I'm going to have a hard time with not eating rice or beans. I think on occasion I will eat those two things. Some days, it's hard to eat a meal without bread or cheese. I have to be more motivated and creative now when we eat our meals. K is on board with doing this with me when it comes to shared meals, but I don't know if he's as committed to not eat breads, cereals, etc.

Today's breakfast:
Pineapples, banana, 1 hard boiled egg, strawberries
Coffee w/ almond milk

Snacks:
raw cauliflower
sliced apples, peanut butter
watermelon
raw almonds

Lunch:
Baked chicken w/ sauerkraut

Dinner:
Pot roast - We'll shred the meat and make lettuce wraps with stir fried peppers, broccoli, onion, and water chestnuts

Congrats on the weight loss! One of my bloggy friends posts a lot of good looking recipes based loosely on Paleo. They also allow themselves one cheat day a week, which might help with your rice and bean cravings. :) Here's the link:

Paleo definitely takes the pounds off of me, but I go nuts from not enough carbs. For me, what works is no sugar/no flour and eating whole foods.

Four pounds is really encouraging! I know you'll do really well.

Michelle, for right now I'm loosely following Paleo. I'm doing a little bit of Paleo and a lot of calorie counting. Kreg and I don't want a bunch of our food to go to waste like our cereals, breads, etc. So, we might eat a grain for instance for one meal like breakfast and then do Paleo the rest of the day. I hope I can cut some of this girth down. :)
