On Monday morning I found a prepared frozen meal in my freezer to dump into my crock pot.
I let the frozen contents sit out for about 30-45 minutes as we got ready for work and day care. I also started the rice cooker so the rice would be finished before we left for the day.
Before heading out the door:
I turned off the rice cooker since my steamed rice was finished cooking. I fluffed the rice up a bit and bid it adieu.
I turned the crock pot on to the low setting and patted it goodbye.
When we returned home we had a delicious meal ready for us. I love it when I'm prepared with a plan.
Recipe:
Healthy Mama Barbecue Chicken
3 medium unpeeled sweet potatoes, cut into 1/2 inch pieces
2 large green pepper, cut into strips
1 large red pepper, cut into strips
1 zucchini, chopped
1 medium onion, sliced
1 tablespoon quick cooking tapioca
2 pounds chicken thighs or drumsticks
1 8-ounce can of tomato sauce
2 tablespoons packed brown sugar
1 tablespoons Worcestershire sauce
1 tablespoon yellow mustard (I wasn't sure if this meant actual mustard or the spice so I did a little of both)
1 clove garlic, minced
1/4 teaspoon salt
Dump everything into two gallon freezer bags, shake it up, seal, label and put in the freezer.
**I rate this recipe to be a bit bland. I added bbq sauce, garlic powder, and red pepper flakes to add a bit more to the dish and it did. The only thing, though, is the addition of the bbq sauce gave the sweet potatoes a weird tangy flavor. Not bad, but also not good.

I love my crock pot. I like the idea of freezing something and then plopping it in. Sometimes making dinner in the morning, even if it's just going into the crock pot, is a hassle.
The recipes I got off the website I linked are all kind of bland, but I love how easy they all were. I'm all about easy.
Unpeeled sweet potatoes? I've never eaten the peel before. Sounds interesting. I should do more of this even though I'm at home, just so I won't be surprised when it's all of a sudden dinner time...
I loaned out my crock pot. I should get it back and use it now that I have no time. I bet I could make some yummy things early in the morning.
